Mmmmm....until today I had not quite realized my love for quiche, especially a bacon mushroom quiche. I added some chopped red, yellow and orange bell peppers to the quiche, along with some chopped onion and fresh thyme. The link takes you to a recipe for a spinach bacon quiche -I didn't have spinach, but I had lots of mushrooms. I also didn't have swiss cheese, but I did have cheddar, gruyère, parmesan and mozzarella so I used a blend of all four cheeses. It turned out delicious, so rummage through you're fridge and see what kind of mouthwatering quiche you can come up with!
